I’ve Been Kinda Cooking…

I’ve been lost on what to do with my time in the evenings. Even though I have dreamt of having my time back for the past two years, I still feel lost. I’ve made sure to cook as many days as possible. Here is some food I cooked in February.

Pasghetti!

I love mini bow tie pasta! I sauteed some onion, red bell pepper and zucchini with Gardein Beefless Crumbles. Added pasta sauce and simmered. I roasted broccolini with coconut aminos in the oven on 350 for 20 minutes.

Banana Oat Pancakes topped with fresh Raspberries

I ground some quick cooking oats, a ripe banana with almond milk. Added cinnamon, nutmeg and vanilla. Cooked in coconut oil and… voila!

Kung Pao Cauliflower with green salad

In the frozen food section at Trader Joe’s you will find Kung Pao Cauliflower. It’s breaded, so not the best nutritional value, but delish! I added a green salad with cucumber, tomato, roasted pumpkin seeds and Asian Ginger Dressing. Quick, easy and yummy!!!

I plan on cooking a lot more in March. I’ll keep you posted.
