I am always looking for ways to stretch my dollar on this plant-based diet. Adding veggies to pasta is one of my favorite ways to do that. Deciding to venture away from red sauce I thought avocado would be a nice change.

There was a half package of dry spaghetti in my pantry. I cooked the pasta according to package direction. I am on a budget so I only used one avocado, if you have more feel free to add more. I also added a handful of spinach and cilantro in a blender. Also adding the juice of half a lime with a little water. For seasoning I used turmeric, cumin, salt and pepper. I didn’t have any fresh garlic, but I bet it would be nice in this. Once the pasta was done I stirred in the avocado sauce. I placed the pasta on a bed of chopped spinach and topped it with a few slices of fresh tomato and hemp seeds. This was a very inexpensive and tasty meal. I hope you give it a try.

Pasta with Creamy Avocado Sauce
1/2 package pasta of choice (I used spaghetti)
1 avocado
1 handful of spinach (plus a little extra for the plate)
1 handful of cilantro
1/2 lime, juiced
1 T. water
1/8 t turmeric
1/2 t cumin
salt and pepper to taste
tomato slice and hemp seeds to garnish
Cook pasta of choice according to package direction.
In a blender or food processor combine avocado, spinach, cilantro, lime juice, water and seasonings. Blend until smooth.
Once pasta is done, drain and rinse in cold water. Pour sauce over pasta and mix well. Place a few spinach leaves on plate and add pasta on top. Garnish with tomato and hemp seeds.
