I went to the farmers market yesterday. I love the farmers market. You always get the best the season has to offer, and it’s all local! I saw some beautiful kale salad and picked it up. I also come across some beautiful cucumber and tomatoes. I really wanted to keep the kale in the most natural state. “Why not a salad?” Yeah, why not!
I gave the kale a really good wash and tore it into bit sized pieces. Chopped some tomatoes and cucumbers. But, the dressing is what really made this salad.
You will only need a few ingredients you already have in your kitchen.
Creamy~Roasted Garlic Dressing
1 small head of garlic, roasted ~ (cut top off garlic head and wrap in aluminum foil, place in 250 degree oven for 25 minutes)
1/2 c tahini
1/2 large lemon, juice
1 T maple syrup
1/2 T spicy brown mustard
1 t amino acids
1 c water
Place all ingredients in a blender until smooth and creamy.
For salad; massage dressing into kale leaves. Once dressing is fully incorporated into kale, add cucumbers and tomato and toss. Top salad with hemp seeds.
