It is a real struggle for me to eat breakfast. I have to be at work at 7:30 am, so I leave the house at 6:45 am. It’s just too early. My brain will not allow me too settle on eating anything that early. The crazy thing is, as soon as I get to my desk I am starving. Not just hungry, but down right hangery!! But on the weekend, I go in big! I make some wonderful fruit filled creations for myself. Let me show you a few.

I had a smoothie one morning, made of spinach, mixed berry blend, ripened banana with tart cherry juice and coconut water. It came out pretty thick, so immediately I thought of all those beautiful smoothie bowl creations I see all over Instagram. “Can I do that?”, I thought. “Of course I can!” I poured it in a bowl added some chia seeds, kiwi, banana, gogi berries and some granola. Yum Yum!!

I loved yogurt as a non-vegan and have had the hardest time finding a good vegan yogurt. That is until I found Almond Dream Coconut flavored yogurt. I always add a tablespoon of chia seeds, mix it all up and but it back in the refrigerator for about 20 minutes. This day I added it to a bowl and loaded it with fresh peaches, strawberries and bananas. Plus pumpkin seed granola with almonds for some texture.

I always have ripened frozen bananas in my freezer. Mostly for smoothies, but now i make lots of Banana Nice Cream. How genius is it to turn frozen bananas into a full on desert breakfast?! This morning I added blueberries and vegan protein powder to my bananas. Topped with some coconut flakes, almonds, gogi berries, chia seeds and granola with raisins. So Freaking Delish!!
