not my momma’s toast

Because I am a foodie and a (new) blogger, sometimes I make things really complicated.  Recently I was thinking about toast.  Growing up it was on just about every breakfast plate my mother served me.  Sometimes with just butter and jam.  Sometimes it was just a slice of cheese.  Now that I only eat vegan, I am always looking for creative and tasty ways to eat simple foods.  Toast for me has became a sport.  I am always challenging myself to get as much flavor as I can on one piece of bread.  I just look for flavors around the kitchen that will taste good together.  You shouldn’t need any special ingredients.  Just use your imagination.  For all the toast I used Ezekiel Bread.

Here is what I came up with.

Cream Cheese and Tomato Toast

This was my first time trying Kite Hill Vegan Chive Cream Cheese.  Honestly, this is the best cream cheese I have ever tasted.  It reminds me of a good ranch dressing, just thicker.  It is fresh, smooth and creamy.  The tomatoes are from a local farmer, so you can imagine how delicious they are.  I added fresh cracked pepper to the top.

Avocado Sriracha Toast

For this toast I added a slice of Chao Coconut Herb with Black Pepper vegan cheese.  Of course I had to add  avocado.  You all know how much I love avocado.  But this drizzle of sriracha took it over the edge.  You have to try this with sriracha!  To be a bit extra, I sprinkled hemp seeds over the top.

Strawberry-Banana Peanut Butter Toast

If you forced me to choose a favorite, this one would be it.  I guess it’s the Elvis in me (as a Memphian), but I really love peanut butter and banana sandwiches.  I spread organic peanut butter on top of the toast.  Added some sliced banana and strawberries.  If the strawberries seem weird to you, just think of strawberry jam and peanut butter sandwich.  Same concept, just with fresh strawberries.  All with grated dark chocolate on top.  YUM!
