I still remember the first time I saw an avocado. I was in my early twenties and my friend Naomi started making up guacamole to have with our lunch. “WHAT IS THAT?”, I shouted. Startled, Naomi said, “An avocado. You’ve never seen one?” “NO” (still shouting, not sure why). I informed her she didn’t have to make any for me. I was not interested in that at all.
Fast forward 10 years later, I was in Utah at a conference where only healthy, good foods were on the menu. A pre-made salad with avocado on top looked better than anything else. I had on my big girl pants that day and gave the avocado a try. My life has not been the same since. I LOVE AVOCADO!! It has become my life’s goal to have a half of one everyday.
I have them with breakfast, lunch, dinner, snack, and sometimes in my smoothies. I have pure love and admiration for this oddly shaped green fruit. When it is perfectly ripened it spreads life fresh, creamy butter. And sometimes even tastes like fresh, creamy butter. Because the flavor is so mild, it can take on anything you throw at it. It enhances all that is come into contact with.
